Instapot Chicken Broth + Soup

Instapot Chicken Broth + Soup chicken broth in mason jar

Prep Time: 20 minutes
Cook Time: 1 hour 15 minutes
Servings: 6 – 8


    • 1 whole organic chicken, cut into pieces (ask your butcher to do this for you!)
    • 3-4 carrots
    • 1 yellow onion, halved
    • 4 stalks organic celery
    • 2 bunches parsley
    • 2 leeks (for soup)
    • 1 lemon, juiced
    • 4 drops thyme essential oil
    • 2 drops rosemary essential oil
    • pinch of salt + pepper


Chicken Broth

    1. Place chicken pieces into Instapot and cover with 6-8 cups filtered water
    2. Add in 1 carrot (halved), onion, 2 stalks celery (halved), parsley, half lemon juice, salt + pepper
    3. Cover Instapot and place on ‘Soup/Broth’ setting and click start
    4. When complete, naturally release for 25-30 minutes
    5. Mix in thyme and rosemary essential oil
    6. Strain broth into glass bowl and set chicken pieces aside to cool

Chicken Soup

    1. Pour chicken broth into Instapot
    2. Shred chicken pieces and add to broth
    3. Chop remaining carrots, celery, and leeks and add to broth with 1 bunch parsley and other half of lemon juice
    4. Season with salt + pepper
    5. Cover Instapot and place on manual setting. Set to high for 2 minutes and quick release when complete
    6. Let cool for 10 minutes and serve!
